Set up the first flagship location launching this new brand in London’s East end in a former tea warehouse, later expanding to launch in the heart of Notting Hill and after Kentish Town – both neighbourhood Italian with Californian influences. serving wood fired pizzas, produce led weekly changing seasonal menu alongside classic cocktails and wine from Italy and California.

Development and direction of all operations:
- R & D, brand and concept development with US consultant team
- Project management of builds and openings from conception to launch
- Responsibility for all F & B, beverage and service consistency across the brands and day to day operational management
