Paddington’s West Olympia Theatre is in the midst of an incredible transformation, evolving into Sydney’s 25 Hours Hotel. The hotel will boast 110 luxurious guest rooms, a breathtaking rooftop bar, a serene central courtyard, eclectic restaurants and cafes, live music facilities, a bathhouse for relaxation and wellness and ground floor retail.

The glamorous city restaurant and mezcal bar is one of seven venues within the Milpa Collective portfolio, mirroring the rustic charm of South-Eastern Mexico.  Featuring elegant curved central booths and cosy banquettes, a spacious dining area at the back, and a welcoming front bar with window seating, along with a wall to ceiling tequila and artisanal mezcal selection. The menu explores wild, bold, and bright Mexican flavours, celebrating the incredible quality of seasonal Australian ingredients with delicious, shareable traditional Oaxacan cuisine.

The expansive indoor and outdoor space features a brasserie, private dining room and cellars, alongside a casual bar area with its own kitchen and seperate menu. The cooking philosophy is inspired by charcoal and fire and the depth of flavour it offers by using quality, locally sourced produce. The speciality of the house is a selection of farm reared cuts, cooked to perfection in Josper charcoal ovens and over Basque open fire grills.

Part of the exclusive Soho House brand, this multi-level operation is comprised of a 26 room hotel, gym, barber, rooftop restaurant, swimming pool and events spaces, along with multiple drinking and dining offerings within this private members club space.

Oversaw a sizeable refurbishment program of the members club and back of house areas with significant repositioning of the brand and values:

  • Advised on the design and layout of the restaurant, kitchen and bar spaces, played a key role in project managing the build.
  • For the re-opening, conducted recruitment, training, member liaison, sat on membership committee and revamped all operational systems.
